Summer Bread Salad


This tasty summer salad not only will satisfy your need for fresh tomatoes, but it wont heat up your kitchen!


Ingredients:
1/2 baguette, cut into 1 inch cubes
1 pound of cherry tomatoes, cut in half
2 large sprigs of basil, chopped
1/4 of a red onion, chopped
1/4 cup balsamic vinegar
1/8 cup olive oil
8oz fresh mozerella, cubed
10 kalamata olives, pitted and sliced


Directions:
1.) In a large bow, combine baguette, cheese, tomatoes, basil, olives and red onion.
2.) Toss to mix up.
3.) Drizzle salad mix with olive oil and balsamic vinegar
4.) Toss again and your done!

  1. I recently made bread salad for the first time last week. I used The New Best Recipes from Cook's Illustrated's recipe. It was alright. But I felt that the vinegar was overwhelming. I really wanted protein to break it up. I think the mozzarella cheese would help. Perhaps even a hardboiled egg?

  2. Mozzarella really does offer a nice retreat from the balsamic vinegar flavor! It also added some whey to help tame the strong flavor of the balsamic.

    I've never tried hardboiled eggs in this salad. I have a feeling it would taste pretty nice! I would consider adding the hard boiled yolks at the last minute to prevent them from getting mushy and becoming a yolk paste as they soak up the dressing.
